An interesting fact is that Ancho or mulato chillies are actually dried poblano chillies.
Poblano peppers are mild, heart-shaped peppers that are large and have very thick walls, which make them great for stuffing. Chile rellenos are often made with poblano peppers.
One of the most sofisticated Mexican dishes is “Chiles en nogada”, stuffed poblano chilies filled with mince meat, spices and dried fruits, covered in a white walnut sauce.
Grow your own poblano chilies and make this traditionaldish at home!Poblanos are usually roasted and peeled before use. Poblano peppers are a super all-around pepper to have in the garden.
Poblanos are great in salsa, dips, stuffing mixes, or sauteed.
Poblano seeds are slow to get going, so sow the seeds about 8-12 weeks before the last frost date. Sow several seeds ¼” deep in 2-3″ earth-friendly containers such as peat pots filled with lightly moistened seed starting mix.
Water well and place the pots in a well-lighted, warm area, 80° F – 85° F. To prevent the seedlings from damping off, keep the soil damp but not wet, and provide good air circulation around the plants.
The poblano rates between 1,000 and 2,000 Scoville units on the heat index.
